Biryani From the Pot: What Makes It Different

"From the pot" on our menu refers to how the biryani is cooked, not just what's in it. Pot-style biryani layers marinated meat or vegetables with partially cooked basmati rice in a sealed pot, then finishes everything together over low heat so the rice absorbs the spices and juices from the layer below it, rather than being stirred together after the fact.

We offer it eight ways: chicken, egg, fish, goat, lamb, paneer, shrimp, and a vegetable version. Each one is cooked to order, not held in a steam tray, which is part of why it takes a few extra minutes at pickup.

There's also a mixed option — the Special Mix Biryani — with a choice of vegetable, shrimp, chicken, or goat for anyone who wants to split an order or isn't sure which protein to pick.

If you've only had biryani from a buffet line, the from-the-pot version is worth trying once for the texture alone: the rice at the bottom picks up a slightly different character than the rice on top, because it's cooked in place rather than tossed together.
